Với sự gia tăng dân số trên thế giới, một số quốc gia đang phải đối mặt với sự gia tăng trong tiêu thụ protein. Với các công nghệ sản xuất protein hiện nay trong nông nghiệp đã phát sinh ra nhiều hệ lụy liên quan đến môi trường sống của con người và càng ngày càng trầm trọng hơn do nhu cầu của con người càng tăng. Việc sản xuất vi tảo đang là một giải pháp hiệu nhằm đáp ứng được nhu cầu này và giải quyết được vấn đề phát thải ô nhiễm do các công nghệ sản xuất protein truyền thống gây ra. Trong nhiều loại vi tảo, tảo xoắn Spirulina platensis đã chứng minh được tiềm năng cung cấp protein hiệu quả so với các nguồn khác trong nông nghiệp. Với tiềm năng như thế, đòi hỏi cần phải có công nghệ thu hồi protein với hiệu suất cao. Nghiên cứu này đã thành công trong việc sử dụng được enzyme cellulase nhằm hỗ trợ quá trình trích ly protein với hiệu suất thu hồi cao từ tảo Spirulian platensis nuôi trồng tại Việt nam. Kết quả này thể hiện khả năng áp dụng được chế phẩm enzyme cellulase trong việc trích ly protein từ tảo Spirulina, mở ra thêm một nguồn cung cấp protein trong xu hướng sản xuất thịt thực vật.

Ms. Lê Thi Thanh Hoa (F’00) is currently Food Engineering student from Faculty of Food Science and Technology, Ho Chi Minh City University of Food Industry. Her research interest includes the extraction of protein in Spirulina microalgae, the application of plant-based protein.

Thi Xuan Quynh Nguyen, Ho Chi Minh City University of Food Industry, Vietnam

Ms. Nguyen Thi Xuan Quynh (F’00) is currently Food Engineering student from Faculty of Food Science and Technology, Ho Chi Minh City University of Food Industry. Her research interest includes the extraction of protein in Spirulina microalgae, the application of plant-based protein.

Dang Ninh Nguyen, Vinh Hao Spirulina Algae Corporation, Binh Thuan, Vietnam

Mr. Nguyen Dang Ninh (M’77) received the Degree of Pharmacist from University of Medicine and Pharmacy, Ho Chi Minh City, Vietnam in 2002. Now, he is General Manager of Vinh Hao Spirulina Algae Corporation (Binh Thuan, Vietnam).
